Jim’s Pizza Dough
Makes 3, 12 inch thick crust Neapolitan pizzas
the Ingredients:
5 cups (24 oz) white flour
13⁄4 teaspoon (.44 oz) salt
1⁄2 packet (.11 oz) of instant yeast1⁄4 cup (1.60 oz) olive oil
13⁄4 - 2 cups of cold water
1Tbs honey
1 ice cube
the Process:
Mix flour, salt and olive oil together.
Put yeast and honey in one cup of warm water about 100F. Let proof for 15 min or so.
Add yeast, water and honey mixture to the flour.
Stir and then let set for 15 min.
Add another cup of water and stir and kneed for 10 minutes.
Coat dough with oil, place in warmed bowl and let rise for 2 hours.
Cut dough into 3 pieces, form into balls, place on floured board and let rise for 1 1⁄2 hours.
Oil pizza pans.
Press and stretch freshly risen pizza dough into pizza pan. If dough gets stiff let set for a few minute and continue.
Heat over to 500F.
Put sauce and toppings on pizza.
When oven is preheated to 500F, put pizza in oven and drop one ice cube on the floor of the over and close the door.
Set the timer for 5 min. Don’t open door.
Check every 5 min until cheese is golden brown and bottom is cooked. 15. Let set 3 min before cutting and serving.
